Breakfast only causes a blood sugar spike in diabetes if it contains too many carbohydrates and is therefore too sweet. Besides the fact that many modern breakfasts consist of oats or cornflakes – meaning a meal that may contain 50% or more carbohydrates – we often add “healthy” fruit and milk as well.
My breakfast currently consists of chia pudding made with unsweetened almond milk. Depending on the season, I add lemon balm from the garden, a quarter of an apple, a little cinnamon, and three to four handfuls of almonds.
