Is the quality of carbohydrates more important than the quantity?

That is actually true.

1. Of course, quality matters.
2. However, the total amount of carbohydrates also matters. The more carbohydrates I eat, the higher my blood sugar rises.

Conclusion: If I eat the same amount of good carbohydrates compared to bad carbohydrates, the blood sugar spikes are usually lower with the good carbohydrates because they are absorbed into the bloodstream more slowly.

Ultimately, the fewer carbohydrates you eat, the lower your blood sugar will be — regardless of the type of carbohydrate.
